Shetland Pancakes
Ingredients:
6oz Plain Flour.
Half Teaspoonful Cream of Tartar.
Quarter Teaspoon of Baking Soda.
One heaped tablespoon of fine Castor Sugar.
One Large Egg.
One Cup of Milk
Method:
Mix the dry ingredients; add beaten egg and milk gradually, beating until a smooth, thick batter is obtained. Grease a hot girdle or frying pan with a piece of suet, Drop the batter in spoonfuls from the point of spoon and when a golden brown colour underneath, and before the bubbles burst turn. Brown other side. Keep hot.
