More than 5,000 years ago, Shetland’s earliest inhabitants would have very quickly realised that their new home was surrounded by prolific fishing grounds. Much later, as trade developed, fish began to be exported from Shetland, notably by Hanseatic traders from around the North Sea who began to base themselves in the islands from around 1400. More recently, fish and shellfish have been sent all over Europe and to North America, Africa and Japan. Naturally, many old Shetland recipes are fish-based and there is a long tradition of salting, drying or smoking fish, craft skills which are maintained today.
Today, our fishermen and suppliers are very experienced in ensuring that fresh fish and shellfish reaches customers, locally or elsewhere in Europe, in the best possible condition.
