Seared Scallops with Vodka & Orange

Ingredients:

4 x 100g (approx) King Scallops (roe off)
Good dash of vodka
3 cups of orange juice
12 cardamom pods
Olive oil

Method:

Reduce orange juice with crushed cardamom pods until you have ¼ cup left.

Quickly fry scallops in a hot pan with a very little oil. 1 - 1½ mins each side. (Do not over cook)
Add vodka, set on fire. Remove scallops
Add juices from pan into orange reduction. Drizzle over scallops
Serve with crushed potatoes, salad & garlic croutons
