Mussels Thai Style
Ingredients:
Mussels x 4 portions
4 tbsp paste
4 tbsp coconut cream
1 tbsp fish sauce
Paste:
1" ginger
1 small onion
3 cloves garlic
2 green chillies
4 black peppercorns
2 stalks lemongrass
2 tbsp chopped coriander
2 tbsp vegetable oil
1/2 tsp salt
Zest & juice of 1 lime
2 tsp cumin powder
1 tsp coriander powder
1 tsp sweet paprika
Method:
Process paste ingredients until smooth in blender.
Fry off paste in a little oil 3-4 minutes
Add mussels cook till open
Add coconut cream & fish sauce
Serve with salad & rice, nan bread etc.
(Discard any mussels not opened)
