Shetland Oatcakes
ingredients:
One Cup of Fine Oatmeal.
One teaspoonful of Melted Fat( Dripping).
Pinch of Salt.
Pinch of Baking Soda.
Method:
Mix dry ingerdients together, measure fat into a cup and add hot
water, mix to a stiff dough and quickly knead into round and roll out
thinly; cut into four and bake on a hot girdle, until edges begin to
curl up-or cakes may be rolled thickly and baked on both sides; crisp
off in a moderate oven.
